Just a little patience

I wish I was a more patient person.  When I want something to happen though, I want it to happen NOW and I want it to come together exactly as I envision it.  Whether it’s a new dish I want to try in the kitchen, a vacation I want to go on or something bigger in the grand scheme of life, I don’t like to wait for things to happen.

Of course you have to work for what you want, but I also believe that if you put what you want out of life into the universe, the universe will help make it so. If you obsess and worry about when it will all come together though, it seems like the universe will take it’s sweet time.  Kind of like a pot of water; if you keep watching it, it will never boil.

So, for tonight I won’t worry, and I’ll let the work I’ve put into my plans and the universe work it’s magic.  In the meantime I’ll sit here and eat Gelato and watch the season finale of Revenge.

Foodie Friday–It’s Summer Cocktail Time

The heat is definitely on here in Arizona, and soon it will be a relentless onslaught of triple digit temperatures 24 hours a day.

I love summer, even when it feels like you are walking into an oven every time you leave air conditioning.  It just means more pool parties and more chances to drink fun cocktails by the water!

Last weekend I went to a housewarming party and brought this drink as my contribution to the festivities.

I dubbed it the “Summer Strawberry Salad”, and it includes:

  • I can of frozen Strawberry Daiquiri Mix
  • 2 cans of water
  • 1 can of Mojito Mix
  • 8 shots of Cucumber Vodka

Mix well and add in fresh lemon, lime, strawberry and cucumber slices along with a few basil leaves.  Stick it in the refrigerator to let it get nice and cold.  Makes 2 quarts.

This was a big hit at the party.  I poured myself a glass when I got there, and when I went back for a second glass a bit later it was all gone.  I’m already looking forward to making another batch!

Bringing the cocktail also made for a fun housewarming gift.  Buy a nice container to bring the drink in and then include the recipe and a gift card to a liquor store (a nice one like BevMo or Total Wine) so the recipients can restock their bar with the ingredients for the drink.

What I’m Loving Lately

1.  Weeknight dates

Date nights are fun, but they seem to be even better when it’s during the work week.  On Monday we went and saw Snow Patrol at Comerica Theatre, and they put on such a good show.  I love this band!

We also went to Barrio Queen in Scottsdale yesterday to celebrate our 3 year anniversary!

Barrio Queen is the latest restaurant by chef Silvana Esparza who is also the chef behind Barrio Cafe in Phoenix.  Barrio Cafe is fantastic, so we were excited to try her new establishment.  I’m happy to report that the food is definitely on par, and I can’t wait to go back and try more of the menu items.  They offer appetizers, entreees, items a la carte and family style, a huge tequila selection and dessert. They have a taco menu that is similar to a sushi menu, so you can order different tacos and sample as many or as few as you want.

2.  Cooking (and this picture of Charlie)

Cooking has been going full force at my place lately.  Shrimp stir fry, sausage and peppers, turkey burgers with goat cheese, cinnamon and cranberries, baked goodies, and cocktails (I have a fun summer cocktail recipe I’m going to share on Friday).  I will give credit where it’s due and say that Eric has been the master mind behind some of the dishes we’ve been making as well, and everything has been delicious!

This is Charlie’s spot right outside the kitchen while either of us is cooking.  I like to think he has secret dreams of being a chef like the rat in Ratatouille, but it’s more likely that he’s just waiting for food to fall on the floor.

3.  Breaking Bad

While I don’t get Mad Men, I think AMC absolutely nails good television programming with Breaking Bad.

Eric and I started with season one late last year and are now onto season three.  I wasn’t sure if I was going to like this show after the first few episodes because it is so intense, but by the fourth episode I was drawn in by the character development and stellar acting from the cast.  It is so well written and interesting, and just like the junkies they sell their meth to, I’m addicted.

This is a great article and interview with Aaron Paul who plays Jesse Pinkman, my favorite actor and character on the show.  It was funny to find out that the blue meth on the show is actually cotton candy flavored rock candy!

4.  Talenti Gelato

Whoa.  Have you tried Talenti Gelato?  If not, you are missing out!  It is the best gelato and/or ice cream you can buy in a store.  I used to be a Ben & Jerry’s gal, but in comparison to Talenti Ben & Jerry’s tastes like fro-yo (apologies if you are a fro-yo fan).

I tried the Sea Salt Caramel last week, and I just bought this gem of a flavor today.  The Sea Salt Caramel was simply amazing; rich and delicious, I still can’t get over how good this stuff is.

And the Caramel Cookie Crunch?  Good Lord.

Foodie Friday – Smores Sticks

I have to say that I’m kind of over the cupcake trend.  I have traded in my baking tins for desserts on sticks now.

I made these “Smores Sticks” for a bake sale at work today, and they were a really popular item.  Can’t beat how easy they are to make too:

  • Take a lollipop stick and insert into the middle of a jumbo marshmallow
  • Dip into melted chocolate
  • Dip into crushed Golden Grahams cereal or Graham cracker crumbs

I imagine these might be fun for camping as well; simply make ahead and then when you are at the campsite roast over the campfire to get it warm and toasty.  Make it easier by using skewers instead of lollipop sticks.

Speaking of desserts on sticks, I also broke down and bought the Babycakes Cake Pop maker.

I know, it’s kind of cheating because half the fun of making cake pops is to get your hands messy in the crumbled cake and frosting.  Let me tell you though, this made the process so much easier.  Simply make your batter as you normally would and fill each cake pop reservoir with 1 tbsp batter.  Cook for 4-6 minutes and you have perfect pops!  No more baking the cake, waiting for it to cool, crumbling it, adding frosting, rolling into balls, etc., etc.

Even if you goof and accidentally overfill the reservoir (like I did), once the pops cool you can easily break off any extra batter that cooked on the sides.

Since they don’t have any frosting, they aren’t as dense which makes it a bit easier to get them to stay on the stick, something I always had a hard time with.  The cake pop maker comes with a handy cake pop stand so you can display your creations, a two-pronged fork to pop them out when they are done cooking and a filling injector.  Turns out you can use it to make donut holes too!  I know what my next baking project will be.

2012 Trip a Month–April–Coachella Day 3

Day 3 was the last day of Coachella, and to maximize my vacation I started the day off at the pool.

There were no acts I wanted to see until the evening, so I took advantage and had a lazy start to the day.  P.S.  I give props to Coachella campers, I don’t know how they do it.  I would need a fully functioning shower and amenities.

By the time we rolled into the gates we had a few minutes to grab food and drinks, and then we headed to Gotye.

Crush alert, hello sexy!  Gotye is known right now for “Somebody That I Used to Know”, but don’t limit yourself to that song.  The entire Making Mirrors album is fantastic, and the set was phenomenal.  He is not only a talented singer but a talented musician as well.  I hope he tours the U.S., I would love to see him perform again.

After Gotye we stopped off at Calvin Harris and heard “You Used to Hold Me” before we hauled a$$ to Girl Talk.

Coachella 2012 was one of the best weekends ever.  I traveled and stayed with a great group, I saw some great acts, and I had the time of my life.

2012 Trip a Month–April–Coachella Day 2

We started off day 2 with brunch for Austin’s birthday.  Eggs, bacon, potatoes, tortillas, guac and salsa, mimosas, birthday cake and birthday hats!

That I’m willing to show this picture on the internet signifies that I was having a good time and wanted to share the memory enough that I don’t care how I looked!

The shuttle ride to the fest totally got me in the party mood.  The bus driver was playing some good tunes and blasted some Avicii, so I basically wanted to start the dance party then and there. 

We got in the gates and ran to the outdoor stage to check out the last of Grace Potter and the Nocturnals set.  They rocked!  Grace Potter is seriously cool, and I am so excited they’re opening for Kenny Chesney this summer.

After Grace Potter was The Head and the Heart.  They are more of a folk band, and while I like their music a lot, they kind of killed my mood.  I was pumped from the shuttle ride and Grace Potter’s set, and they were just so mellow.  They sounded amazing though, so I can appreciate that.

Andrew Bird was next.  He is a stellar musician and I love his music, but I think I would like to see him in a smaller, more intimate venue.  Still enjoyed his set a lot though.

I went simple with my outfit for day 2.  It was so hot I just wanted to be as cool as possible so I rocked cutoff shorts and a tank.  I did add some feather earrings to spice things up a bit though!

I had a lot of time to kill before the next set I wanted to see, so my friend Jen and I walked around the grounds and checked out the scene and some of the art installations.

The balloon chains are really fun because people take turns holding them.  If you want a chance you can go and tag the person holding them at the time and then it’s your turn until someone tags you.  They are all lit up at night too, and while it’s hard to capture the affect on camera, it looks really awesome and sets the atmosphere.

Alright my friends, I’ve saved the best part of day 2 for last.

I have never had so much fun dancing in my life.  From the first beat to the last, the energy in the Sahara Tent was amazing, and I literally did not stop dancing for his entire 80 minute set.  Eric was in the beer garden behind the Sahara Tent and we were texting a bit at the start of the set.  Besides all of the people in the tent, he said there were thousands more people standing outside as well.

He started off with the chorus of Wild Ones by Flo Rida and Sia, and EVERYONE sang along – “ I want to shut down the club with you” – before mixing in some beats from his single Titanium.  Throughout the night he mixed in some Levels by Avicii and all of his hits as well, including Without You featuring Usher.

I wish I could convey in words how awesome it was.  For me it was easily the best set of the entire weekend.  I had taken a few videos of the crowd, but like a dope I deleted them on accident.  I found this video on YouTube from when he brought Sia on stage to do Titanium in it’s entirety.

After David Guetta we checked out the end of Miike Snow and then went back to the Sahara to watch Kaskade.  I spent all my dancing mojo on David Guetta though, so we ended up sitting on the grass outside the tent and people watched.  People watching at Coachella is almost as entertaining as the musical acts though, so I was fine with that!

While the boys watched headliner Radiohead we decided to end day 2 and headed back to the condo to get ready for day 3.  Another fantastic day at the fest.

2012 Trip a Month–April–Coachella Day 1

The month of April found me in Indio, CA for the Coachella Valley Music and Arts Festival.

Usually referred to as simply “Coachella”, the fest is organized by Goldenvoice and held at the Empire Polo Club in the Inland Empire’s Coachella Valley.  Celebrities, hipsters, free spirits and music lovers alike flock to Indio every April to enjoy the three-day party in the desert.

Until 2012 it was only held one weekend a year, but due to the fest’s growing popularity Goldenvoice added a second weekend. The show’s organizers promised an identical festival experience each weekend so people needn’t fret that they would miss something choosing one over another.

We went the second weekend, so on Thursday April 19th we loaded up the car and headed West on I-10.

Four hours later we arrived at our fabulously retro condo rental in Palm Desert and set out for some food and drinks at The Beer Hunter, a must visit spot on the weekend’s agenda. After properly welcoming ourselves to Cali, we headed back to rest ourselves up for day 1 of the fest on Friday.

After some sleep, a run (for me) and food we gathered ourselves together and headed out to the shuttle which would take us to the Empire Polo Club.

Fashion is big at Coachella. Google “Coachella Fashion” or “What to Wear to Coachella” and you’ll come up with tons of sites giving advice. I tried to capture the essence of the festival in my own way; I didn’t want to be a poser and start wearing total flower child garb, but I figured I’d play along a little bit. The maxi dress worked pretty well; the material was light enough to keep me as cool as you can be in 100 degree weather, and I only had to worry about sunscreen up top.

As we were walking in the gates we heard the last song of James’ set, Laid, coming from the main stage. You know the song: “This bed is on fire with passionate love…” We danced our way into the fest and then most of us split up to check out the bands we wanted to see.

First up was Gary Clark Jr. Awesome performance and sweet guitar riffs.

Hydration and shade (did I mention it was hot?) were next until the second band of the day, Dawes, was up.  Dawes was pretty good; I hadn’t heard their music before that day but I liked their set. Kind of mellow and perfect to listen to as I looked at this sunset from the Mojave tent.

Next up were British rockers Pulp; lead singer Jarvis is the ultimate frontman and put on an amazing show. I’ll admit that I may have been slightly more excited that he was the band singer from the holiday ball scene in Harry Potter and the Goblet of Fire than anything else, but they turned out to be my favorite set of day 1.

M83 was after Pulp, but I only stayed for 10 minutes of their set. It was so crowded in the tent and I just wasn’t into it. To me, their music was pretentious, and the crowd was, for lack of a better word, douchey. I went next door to the Sahara tent and danced to DJ Afrojack which was a much better time!

We closed the night out by watching Swedish House Mafia on the main stage. The picture doesn’t nearly do justice to the amazing light and pyrotechnic show they put on, so take my word for it when I say it was impressive.

We decided to get a head start on the crowd and head back to the shuttle, so we left a bit early. As I looked around though, I realized that we literally danced our way into the gates with James and were dancing our way out with SHM. Thank you for a great day 1 Coachella.

Today my blog is 2!  I can’t believe it has already been 2 years since I started this endeavor.  My blog has had it’s ebbs and flows, and I’m happy that I’m making more time for it now. 

Thanks to anyone who has read, is reading now or will read in the future.  I appreciate the blog love and look forward to more years of writing!

2012 Trip a Month–March – Apache Trail

For the month of March I invoked my clause that a trip would count even if it was a day trip somewhere.  After all, realistically I know a full-fledged trip may not be possible each month, and while I had hiked the Superstitions before, I had never made the full drive down the Apache Trail.

My Mom came to visit in March, so one day we packed up the car with a picnic lunch, Charlie and a camera and made our way to drive the trail.

The Apache Trail is about an hour or so away from the Phoenix area, and it was a perfect day trip.  I would highly recommend if you are in town visiting or if you live here and have visitors in from out of town.  Check out this link for some excellent info on making the drive.

Our plan of attack was to drive down to the Canyon Lake area and then make our way back to the Superstitions where we would have lunch and walk the trails to look for wildflowers.

We didn’t spend a whole lot of time near the Lake because we didn’t have a parking pass and pets weren’t allowed.  What?!  Oh well, we knew there was a lot more to check out anyway.

We got hungry a little earlier than we thought so we made a stop near a little pond area and ate the sandwiches we packed.  It was a perfect lunch!

Eventually we made our way back up the Apache Trail to the Lost Dutchman State Park.

Superstition Mountains March 2012

The Superstition Mountains was my first big hike when I moved to Arizona, and I made it all the way to the top of the Flat Iron!  The picture in my About section is me on top of the mountain. 

After paying the fee to park, we got out, stretched our legs and started up one of the trails.  Charlie had a blast pretending he was a puppy from the Old West with his bandana on!

We hiked for a bit, took a break and then hiked a bit more.  We saw some really pretty wildflowers and desert plant life along the way.

All in all the trip took about 5 hours.  The Apache Trail drive could easily be tailored to your wants and needs though - stop to hike, take photos, picnic, swim in the lake or simply drive up and down the trail and take in the scenery.  Either way, it’s the perfect way to lose yourself in the beautiful surroundings of the desert and get a little closer to nature.

Foodie Friday: Easy Flourless Chocolate Cake

I consider myself quite the Sprinkles Cupcakes aficionado.  I’ve worked my way through most of their regular flavors, and I like to try as many of their special flavors throughout the year as possible.

In April I tried their Flourless Chocolate, and I was instantly in love.  I can honestly say it was the best cupcake I’ve ever had, and the velvety taste and texture stayed with me ever since I had my first bite.  Since it’s a flavor they only have once a year (it’s their Passover special), I was on a mission to find an equally delicious recipe.

As I started researching I found that most of the recipes seemed complicated, and I’m so not into complicated recipes.  With Eric’s birthday last weekend I finally searched for easy flourless chocolate cake recipes and found this one from the Prepared Pantry.

Here’s what you’ll need.

  • 8 large eggs
  • 1 cup dark cocoa – the original recipe calls for a very high quality cocoa, but I didn’t feel like making a stop at a specialty store so I rolled the dice and went with Hershey’s Special Dark
  • 1/2 cup (1 stick) butter, melted and cooled slightly
  • 1 1/4 cups granulated white sugar
  1. Preheat the oven to 325 degrees and then in a stand mixer, beat the eggs for about three minutes.
  2. While the eggs are beating, melt the butter and measure the cocoa and sugar. 
  3. Add the sugar and cocoa and beat into the eggs.
  4. While the mixer is still running, drizzle in the melted butter and continue to beat until well mixed.
  5. Transfer batter into a pan.  The original recipe calls for a spring form pan, but since I didn’t have that I went with a silicone pan.  I would recommend that or the spring form because you want it to come out as easily as possible.
  6. Bake for 30-40 minutes.  Mine took 35 minutes, and I knew it was done when I stuck a thermometer in the middle of the cake and it read 165. 
  7. Cool on a wire rack and then transfer to the refrigerator to cool completely.

The topping potential is endless!  You could sprinkle it with powdered sugar or top it with raspberry or strawberry sauce, but I chose to go with a simple vanilla glaze and then adorn it with strawberries.

For the vanilla glaze I just took a little less than 1/3 cup butter, melted it in a microwave safe bowl, added 1 cup powdered sugar, 1 tsp. vanilla and then mixed well.

It turned out pretty well if I do say so myself, both in looks and taste. 

Next time I want to try and use the really fancy cocoa and see if it makes a difference.  I was also thinking of taking dark chocolate baking bars and melting them down to use in place of the cocoa.  I’ll definitely make this again though.  Gotta love a recipe that only calls for four ingredients and a few steps!
